Asparagus-Seaweed Rolls
Ingredients:
150 g (1/3 lb.)
fresh asparagus
50 g (1 and 3/4 oz.)
vegetarian fish roe
50 g (1 and 3/4 oz.)
shredded lettuce
3 sheets
purple laver seaweed
2 c.
oil for frying
4 T.
mayonnaise
(1) 1 t. each:
peanut powder, sugar

Cut each sheet of purple laver in half to make
a total of 6 sheets. Blanch the asparagus
briefly in boiling water, cool in tap water, then
peel. Cut into pieces the same length as the
purple laver. Divide into 6 equal portions.

Heat the oil to about 300°F (149°C).
Deep-fry
the vegetarian fish roe in the oil until fragrant.
Cut into 1 cm (1/3") slices. Divide into 6 equal
portions.

Place one portion of asparagus, one portion
of vegetarian fish roe, some shredded lettuce,
and some (1) on each sheet of purple laver,
and top with a bit of mayonnaise (illus. 1). Roll
into a cylindrical shape (Illus. 2), cut into 4
equal pieces. and arrange on a serving
platter. Serve.
