Sesame-Spinach Rolls
Ingredients:
600 g (1 and 1/3 lb.)
fresh spinach
1 T.
toasted white sesame seeds
1 T.
sesame paste
(1) 1 t.
thick soy sauce
1/2 t. each:
MSG (optional), sugar
- Wash the spinach thoroughly and blanch
in boiling water for 1 minute. Cool in tap
water and drain well.
- Divide the spinach into 2 equal portions.
Cut off the ends so each bunch is the
same length (illus.1). Roll each portion of
spinach tightly into a cylinder with a
bamboo sushi mat (sudare; illus.2), then
cut into 3 cm (1 and 1/4") lengths. Arrange on
a serving platter and sprinkle on the
toasted sesame seeds. Dip in (1) before
eating.
